Spicy, Egg and Oil Free, Vegan Mayonnaise
Ingredients
1 lb. regular tofu, drained and crumbled
1 lemon, squeezed
1 � teaspoons ground coriander
3 garlic cloves, crushed
� cup cider vinegar
2 - 3 teaspoons dry mustard
2 teaspoons tarragon
1 teaspoon garlic powder
Combine all the mayonnaise ingredients and mix in a blender or food processor until smooth and creamy.
