Does anyone have a good recipe for pork fried rice? I am making crab ragoon(sp?) for supper and wanted some fried rice to go along with it.

Teacher Shell,

So sorry to be so behind in giving you an answer, as I bet that Crab Rangoon (yum!) is long gone.

As you probably know, Any kind of fried rice, is the Chinese version of getting rid of leftovers, especially, since the number one requirement is to have COLD leftover rice. The meat or seafood ingredient is just what happens to be in the frig.

Pork Fried Rice

3 c cooked, cold rice
1 egg, lightly scrambled
1 c leftover,lean pork, diced
2 slices of bacon
1/4 c diced onion
1/2 c frozen, carrots/peas (or more, as you like, especially, if you don't have much meat leftover)
2 tsp Soy sauce
Dash of white pepper (optional)
Several spring onions, finely sliced, green part only (optional for garnish)

Method:

Heat a wok to a medium flame or about 6 on your electric stove. Cook bacon, until crisp;remove to paper towel to drain;then crumble for topping;set aside.
Remove all but a tablespoon of the bacon grease;reheat to medium. Add diced onions and carrots and peas; stir constantly until onions are becoming translucent and carrots and peas are bright orange and bright green.
Push to one side and add lightly scrambled egg;while cooking, break up into very small pieces. Add diced pork,and make sure all is heated well.
Add rice and soy sauce;heat and toss very well.
Remove to serving plate and top with green onion and crumbled bacon.

Does anyone know if brown rice can be substituted in fried rice recipes without affecting the consistency? Thanks!

I use brown rice and long grain rice all the time because my husband is on a low-carb/good-carb diet. It does change the consistency. The rice doesn't stick together as much. But it doesn't alter our enjoyment of this dish. So I say yes, it can be substituted.

Hi,
I'm a VERY simple cooker <img src="/images/graemlins/grin.gif" alt="" />, so here's my recipe:
Cut up chunks of cooked pork and set aside. Cook rice, put in wok with celery, bit of green onion, bit of soy sauce, water chestnuts and the pork----stir over low heat.
Put a hole in the middle of this rice mix, and pour two (depends on the amount of rice you are preparing) whipped eggs in the middle to cook. Keep an eye on it while it cooks. You want it to be like the consistency of scrambled eggs.
Then, mix it all up.
