Bob brought me home a nice chef salad for lunch with turkey and egg. Tasty with ranch dressing.
Have you had a salad today?

I made my version of this salad over the weekend & it was delicious -- perfect for the fall! It's healthy, delicious & must try :-) Pumpkin Salad with Pine Nuts Pecorino and Balsamic Vinegar I used pecans instead of pine nuts (walnuts would be good too) and added some toasted pumpkin seeds to the salad. I also added some fresh rosemary & fresh ginger to the spice paste. I used a little freshly chopped cilantro as well at the end. For a heartier meal, add some quinoa or couscous :-)

Tried the new chicken and hummus power salad at Panera Bread today. They use a cilantro hummus and the juice of 1/4 of lemon as dressing, instead of the norm. It was tasty and filling. I was full half way through. Ingredients included, chicken breast, spinach, tomatoes, cucumbers, red onions, and the cilantro hummus.
I think I'll try making it at home with my homemade kalamata olive hummus. I'll let you know when I do.
