It tastes good, is easy to make, and if you buy the salmon at ALDI, it is cheap, too!

I had the BEST sandwich last night! I finally got my hands on some fresh farm tomatoes. The two tomatoes I selected were a big variety, bigger than what would fit in the palm of your hand. I wanted to have the tomato fill up the width of my wide Arnold Oatnut bread slices. I grilled the Oatnut bread with a little butter in the frying pan, like grilling a cheese sandwich, but the middle was empty. Once the grilled bread cooled I slathered mayo on both slices of the bread where it was not grilled. Then I sprinkled a little salt onto the mayo, along with a good amount of black pepper. Then two thick slices of tomato, one on top of the other went onto one slice of bread. Then I put three layers of fresh basil leaves on top of the tomato and put the other slice of bread on top to close the sandwich. Oh goodness! I was in heaven. It was a little messy as the tomato started to drip the juice, but the freshness of this sandwich was divine. Just thought I'd share

A little messy? Come on Debbie, you know that you had juice running down your arm!
This sandwich sounds absolutely wonderful!! I am going to find some fresh tomatoes today. A friend told me where to find good ones. So, tomato sandwiches for dinner tonight! Thanks for the fantastic idea.

I found some delightful summer tomatoes today. Tonight, we had BLTs. Hardwood smoked bacon, potato bread, thick sliced tomatoes, lettuce, and mayo make a delicious sandwich. We had chips, fresh peppers, cucumber slices, and cantaloupe with the sandwiches.

I love summer tomatoes with cheese, mayo, and good bread. These are my favorite breads to eat with summer tomatoes: baguette, sourdough, rye, pumpernickel, and Italian bread.

I am liking my Oatnut bread. It is wholegrain but soft and yummy. I had the same tomato sandwich last night for dinner, but I was out of fresh basil. I sprinkled dry basil instead on the mayo that was on both slices of bread, and I put the salt and pepper on both sides of each tomato slice. The dry basil was a little different than the fresh, but still very tasty.
I think I am hooked for a while....
