What sandwiches do you make in the summer when the weather is hot? How do you beat the heat, instead of cooking and heating the house up?

Hi Connie,

Maria just brought back some tahini from San Jose, CA so that we could enjoy some hummus and chopped cucumbers on teleras or bolillos.

Another appropriate sandwich for this caliente time of year would be imitation crab with corn niblets and pico de gallo on a pan rustico.

I like those ideas, edwardd1. Cucumber always refreshes! The crab would be delicious without any cooking, too.

I like smoked salmon with chopped red onion, chopped tomato, cubed fresh avocado and fresh lemon juice.

Those all sound terrific and cool...as in not hot! LOL I like to buy a rotisserie chicken and make sliced chicken sandwiches or chicken salad to put on crackers or sliced veggies. Cucumber is tasty with a dab of chicken salad.

I'd take that and add a thick slice of fresh mozzarella to it. Yum!

I just saw a commercial for a chicken sandwich with cheese, guacamole and Fritos corn chips. I adore crunchy textures so this sounds yummy to me!

This is all making me very hungry! Since I started working retail, my appetite has been non-existent. Suddenly, I want some of these yummy sandwiches.

I make chicken, egg, and tuna salad sandwiches more so in the summer than when it is cold outside. I enjoy cucumber sandwiches with mayo, salt, and pepper on light toast. I also like tomato sandwiches with thick slices of fresh garden tomatoes, mayo, salt, and pepper.
