According to the Joy of Cooking, my favorite standby, jams are made from pureed fruits, preserves from chunks of fruit, and conserves have several different fruits, and often include nuts and raisins. Compotes, which I looked up online, are made with fresh or dried fruits�which are soaked in liquid such as a liqueur�cooked in a light sugar syrup. Compotes are usually served in their cooking liquid as a dessert.
