I listened to a little presentation on horses some time ago when we went horseback riding. I remember the guide saying something about probiotics and Alfalfa being used to help a horse maintain a healthy mass. Not sure if it's the be-all end-all but it may be something...

Probiotics is always a great thing for horses. As far as the alfalfa that will depend on what you are doing with the horse and what they are used to.
