For Nimrook. Here is what I did.
1/ I kept an eye on him (checking him in the airship) 'til I saw he only had one game left.
2/ I released my keeper (Keepa IIRC) by hiring somebody.
3/ I entered an Exhibition game against the Al-Bhed.
4/ After Blitzoff, passed the ball to Tidus who scored. 1-0. I immediatly forfeited the game.
5/ The Al-Bhed did not renew with Nimrook and took keepa instead.

As for your other questions. No the stats are not random but they vary from level to level. For exemple player 'A' may be much better than player 'B', when they are both level 25, but when they reach level 80 player 'B' beats the [censored] out of player 'A'.
That said Lakkam vs Svanda vs Brother as MF depends on playing style and whether you intend to reach level 80+.
If you like speed then Brother is the best, if you like one who can dribble, pass and occasionally shoot pick up Svanda, Lakkam is decent as a defensive MF, but at high levels he has a problem: None of his stats hardly gets above 60.
