This seems to be working for me. Didn't take a picture but tonight I grilled up a small london broil and sliced off 3 oz then filled the rest of my plate with sauted kale. The kale has more body than spinach and I really had to chew it so it was very satisfying. An apple tonight with some tea and I'm done eating for the day.

I love kale! Did you know you can make kale chips as a great snack? Tear into pieces, toss with a bit of olive oil and salt and then roast until dry and crispy!

Yes Lori, I knew about them I saved some of the kale I bought today and will make some tomorrow. They sound interesting. Should have taken a picture tonight too...it was so pretty.


Since you like kale, here's a recipe I made today, you might like it. Goes together fast and is yummy.

Bean and Kale Soup

2 Tbs olive oil
6-8 cloves of garlic chopped (I buy the stuff already done)
2 tsp dried oregano
1 6oz can tomato paste
2 Tbs red wine vinegar
2 15 oz cans cannelini beans drained and rinsed
2 qts chicken stock, water or combination
salt and pepper
1 bunch kale with ribs removed and leaves chopped.

Heat oil in a large pot. Add garlic and oregano and cook no more than a minute. Add tomato paste and vinegar, and cook another minute. Add beans and stock and bring to a simmer. Season with salt and pepper. Add kale and simmer, partially covered, for 1 hour. Season, to taste, again with salt and pepper before serving.

To make soup???? It takes about 15 min to put together and that counts rinsing and chopping the kale. Remember...with kale to remove the stem. Take a sharp knife and gently slide it down each side of the stem...leaves come off easily...then chop them up. Let me know how you like it if you try it.

That looks great! Definitely small plates are a HUGE help - and also eating slowly is key. Put on some slow music. That can help you slow down and that way you fill up. Also drink lots of water! That helps you to feel full.
