A key thing many people do is make food and then freeze the parts you don't eat. That way if you make a dinner of mashed cauliflower it's fine if you don't eat it all - you freeze the rest and then it's quick and easy some other time!

Salads are SO tasty!! I love salads. Everyone should eat and adore salads smile

Jilly - buy the "salad in a bag". Just pour and eat. It might cost a few pennies more but you *more* than make that up in your health!

Lisa, every time i do that I end up tossing bad salad. Produce and jilly = waste.

The best thing for me is the butter lettuce - since it comes with roots, i treat it like a plant. I water it until it's all eaten, and then compost the root ball.

What we had to do with the bag salad is to take it in stages. The first stage was to treat the bag as one serving plus compost. We didn't stress over eating the entire thing. All we had to do is eat SOME of it and the health benefits would be worth it. I.e. give us time to build up the salad eating habit. You can't build that habit without having a salad there to eat smile And if you remove the stress associated with it, then you are more likely to do it. You want it to be a 100% happy experience.

The more you do it, the more you associate salads with happiness and the more you tend to eat them, and soon the whole bag is being eaten!

that is a decent way to think about it. I will use my butter lettuce for now. i also use chopped cabbage in place of lettuce in foods - lasts a lot longer.
