I am waiting for my chocolate to finish.
I think I'll go with your first batch's 1 1/2 T of sugar. smile But, I'm waiting for the finished product to make a final decision.

Do you keep it on the stove when adding the chocolate, sugar and vanilla? Is the goal for the sugar to melt and not to have a grainy chocolate?

Do you pour it into a mold and harden it in the freezer?

My husband has some vanilla beans he has been holding on to - I forwarded your vanilla recipe and cannot wait for him to try it.

Hi Lisa. I keep the chocolate on the stove when I add the sugar and vanilla. The sugar does need to melt into the chocolate. I pour it in a pan (I don't have a mold), cover and place in the refrigerator to harden. Be sure and take it out after about 10 or 15 minutes to score it with a knife. If you place it in the freezer, you would just end up with frozen chocolate.
