That sounds awesome Michelle!

I had a great salad today for lunch, along with some tuna and mixed veggies. Very healthy. Just to prove that you CAN eat healthy foods on a cruise ship, very easily! Bob of course had the triple sliders (mini-burgers) with a large order of fries and banana pie. Which proves the opposite point too smile

Michelle, your dressing recipe sounds like a great base to use for a variety of ingredients. Thankfully, it doesn't take a lot to change the taste every now and then. Thanks for sharing - I'm going to try it for lunch tomorrow.

I definitely recommend shaking up your salad every once in a while so you get new flavors! Add in some pine nuts, toss in some different types of tomatoes, sprinkle on a new herb. You could discover a new favorite!

Had a marvelous salad for dinner tonight. 1/2 bag of salad mix, red onion, green olives, radishes, cucumbers, shredded mexican cheese, hard boiled egg...and mayo with garlic powder.

That sounds great Granny! I never add radishes into my salads, I should start trying that out! They are very good for you.

I had a great salad earlier with lettuce, olives, cheese, ranch dressing, pine nuts, bits of pecan, and my homemade sprouts!

Salad for today - regular lettuce, spinach, cheese, carrots, red cabbage, tomatoes, pecan bits, pine nuts, ranch dressing. I gave the keets some lettuce too! Everyone benefits.

We're out of sprouts and need to start some more!

I have to chime in--I made a big salad last night for dinner:

herb lettuce mix --Yes, I am that lazy--and rotting, never-even washed greens are just a guilt trip I don't need these days! :'P
red onion
grape tomatoes
one hard boiled egg, chopped
teaspoon of real bacon bits from a jar
tablespoon or so of dried cranberries
Boca spicy chicken patty, cooked & then chopped so it was warm in the salad

And, I made a homemade honey-mustard vinaigrette that was delish! Cider vinegar, spicy brown mustard, garlic (about a teaspoon minced), little bit of salt, pepper, 1 teaspoon of honey and olive oil. I could have drank it! Wish I'd made more already. You could use splenda for the low-carb, but I was using honey for my sore throat! So, it was medicine! LOL

Deb, that sounds wonderful...sans the bacon bits for me since I'm vegetarian. I cooked up a Boca burger one night at put it on my salad too..quite tasty.

My salad tonight was a side not the main course, but I had a bagged lettuce mix, radishes, carrots...yes Lisa, I actually had carrots in my salad..not too bad. I was out of olives, but I had some of the pimentos left in the bottom of the jar, so I used them and some sun flower seeds topped with a greek dressing. Very satisfying

My salad from today had carrot bits in them as part of the mix I bought. So I am eating more carrots! I forgot to add in olives though! smile

I'm out of pecan bits now, I need to get more!
