That's so wrong that it's unsafe to go somewhere that is only 2 minutes away! It sounds like time for your city planners to put in some bike paths and safe walkways!

Our city is finally drawing up plans for bike paths in the city with the increase in bikers. Scooters will be allowed to use the lanes as well.

That is great news Jase!! It helps the entire community, cuts down on pollution, and encourages happier and healthier citizens! Let us know how they do!

We have been trying to put a bike path in here for literally 30 or more years. It is STILL in the planning stages.

I guess I am a processed food fan but I do try to do fresh. The trouble is I work such long hours, by the time I get home I just want something fast without too much work.

I definitely understand the desire to "eat quickly". Fresh food can be quick too! If you pull a steak out of your meat drawer you can have it grilled and ready to eat in only a few minutes! Brussel sprouts steam up in 3 minutes flat. Go fresh for flavor!

I just learned you can cook rice in the microwave without special equipment!

Just use a glass bowl, add 1 cup of rice (long grain) and 2 cups of water. You can stir in a pinch of salt and a pat of butter, if you like.

DO NOT COVER. Cook on high for about 16 minutes. Let it stand for 5 minutes and voila!

Quick things that go with rice:
1. Stir fried veggies.
2. Poached fish filets.
3. Chicken breasts sauteed in garlic and olive oil.
4. Red beans (canned. I guess that is processed!)
5. Eggs, fried.
6. Sashimi-grade tuna.
7. Roasted tomato smashed on the rice. Add spices like sumac.
8. Teriyaki vegetables or beef patty

The microwave bakes potatoes quickly, too. A stuffed baked potato is a nice quick meal. Stuff with anything.

Grilled sandwiches are quick and easy, too. Here are our favs:

1. Grilled cheese.
2. Grilled mozzarella with basil and tomato
3. A sandwich with hummus, red onion, cucumber and tomato on toast or pita.
4. Grilled cream cheese with jalapeno pepper jelly and bacon.
5. Grilled peanut butter with banana.

I read that you can bake "grilled" sandwiches on a cookie sheet in the oven so all the sandwiches will be done at the same time. Just be sure to butter both sides of the sandwich well!

Another quickie: Salads! Dinner salads have protein--meat, cheese, nuts, legumes--with any veggies you like. Quick and easy!

LOL Lori you realize you're in a low carb forum - we normally avoid high-carb things like rice as a filler food! Potatoes are similarly avoided because they are chock full of calories. Great for a hard working Irish farmer. Less great for a stationary office worker smile

So I would definitely steer people in the direction of salads, fresh vegetables and tuna fish rather than eating a potato or rice! That's just our way of life here smile

ACK! Well, duh. I only saw the "processed food" topic!!!

Sorry 'bout that, folks!!!

So much for those quick and easy ideas.

Well, the only thing recipe that comes to mind is one for Lettuce Wraps. Fill lettuce leaves with anything from hummus, red onion and cucumbers to precooked chicken, shredded carrots and a peanut sauce!

well we are low carb, not necessarilly no carb... so thanks for the quickie ideas for those of us that still eat "some" carbs ;0)
