Ohhh, I'm so happy to have found this forum! I lived in Louisiana for four out of the last six years. In 2008 I was at a fair and had a Swamp Egg. It was sooo good, but I have no idea how it was made and all I remember was that it was a warm hard-boiled egg.
And, about four years ago I found a great recipe for crawfish pies. They were just like Natchitoches meat pies, but stuffed with crawfish, shallot, and other ingredients I can't remember. I used a refrigerated pie dough for the dough. Any ideas on this recipe?
