Kid Friendly Appetizer Recipes

I don't know if this would count more as appetizer or dessert, but my 5 yr (oops, 6 yr old son, he just had a bithday) helped me make it last night.

We called it Pina Colada Tostadas

ingredients:
4 large tortillas
2 bananas
2 small cans pineapple tidbits
2 cups mini marshmallows
1 cup shredded coconut
sugar & cinnamon

1. spray 1 large backing sheet, laydown 2 tortialls side by side
2. sprinkle tortillas with cinnamon and sugar
3. sprinkle tortillas with shredded coconut
4. slice bananase thinly and lay banana slices arouns tortillas. (no need to aciduate bananas - because they are being cookd immediately)
5. spread pineapple tidbits over bananase
6. sprinkle marshmallows over pineapple.
7. cover with remaining 2 tortillas
8. spray tortillas with backing spray and sprinkle with cinnamon/sugar
9. bake at 350 for 7 minutes - or until marshmallows are melted.

Slice live a pizza and serve.

**Seth had a blast making this, because other than cutting the bananas, he could do everything all by himself (with a little supervision so my kitchen didn't turn into a candyland! LOL!)

Your Pina Colada Tostadas sound wonderful! Not to mention how much fun it is to say "Pina Colada Tostadas"--what a great name! smile
