In every restaurant I've ever worked in (from my mom's caterer service, to her family restaurant, to a truck stop, to linens and crystal type restaurant) tips have been very important.

They actually got more imprtant, the "Classier" the restaurant got. Because restaurant, by law, are only required to pay 1/2 of what minimum wage is - the assimption is made thst the difference will be made up in tips.

And most reataurants pool their tips at the end of the night and divy them out equally. Which is why life can become very uncomfrotable for a waiter(ess) to goof off and leave the majority of work to the others. That person will quickly find themselves bussing tables or washing dishes!

Today, I went to the nail salon. I realized I tip between 15-20%. I've been going to this particular person for years. Two weeks ago, I was running late for my appointment. She took me anyway and was sensitive to fact that I was visibly upset. In addition, I felt bad because I'm usually on time, and I rarely have to wait. ...to make matters worse her next appointment was on time. Although, we didn't have our regular conversation, I tipped her over and above to show my appreciation. (She knew when to be quiet.)

Michelle - that seems unfair in a way to me. If one waitress is really good, friendly, aware, has a great memory and so on, I think she should be rewarded for her efforts. If another waiter only does a so-so job, should he really benefit from the other waiters' skills?
