I love the idea of eggplant pizza! I have to try it. I decided to stick to induction another week. Is chicken broth ok for induction? I am thinking if I use that and put some chicken and maybe cut up onions and celery I will have chicken soup! That sounds good right about now. I am sooo tired of eggs! I have lost 7 pounds so far.

Well, the first week I lost 4, but gained 3 back this past week. : (

Lollie - that is great news!! Yes chicken broth is quite fine all day every day smile Just keep an eye on the salt content. Some of those are VERY salty. They do have low sodium varieties.

There are lots of things other than eggs to eat!! How about turkey, chicken, tuna, swordfish, venison, pork, ... I assume you're talking for the meat part of your meal? There are also TONS of non-meat foods to eat out there, what veggies do you like?

OK we can rescue you smile What changed in the second week in your eating habits? Did you drink enough water? Take your vitamins? Did you add in more carbs? Did you reduce the exercise you were doing? Get enough sleep? We'll help out!

Thanks Lisa! Oh, I don't eat just eggs. I eat some kind of meat and veg for dinner and tuna, a ham wrap or egg salad and celery for lunch, and of course hard boiled eggs. But I do have eggs almost every morning, because I am at a loss at what to eat with not a lot of time. Are those small packs of Buddig meat ok? They are 1 carb for the whole pack but are they considered a processed meat? I love the beef.

Lolly - I'm looking at the Buddig website and they don't say anything about how the meat is made. Does the package say anything about preservatives? It's the preservatives you have to be cautious of for all meats. That's a health issue, not really a "low carb" specific issue.

OK you need quick healthy breakfast ideas? Let me start a thread about that for you!

What I made for dinner tonight:

It's low-carb and delicious.



I found a recipe for something called Joe's Special, I think that's it--with ground beef, eggs & spinach. I had ground chicken and spinach and cut the eggs in half and added about 2 oz. cream cheese, plus onion, garlic, red pepper flakes, salt, pepper, nutmeg. Oh, and a little Parmesan on top.

It was divine. Made 4 huge servings. I'll have leftovers for days! Yum-o!
