The jicama is really good. I've never had it before & it looks like something you don't really want to eat! LOL But, it was easy to peel and tastes like a pear/apple, only a bit less sweet. Crunchy, so it would be good in a stir-fry.
I'm having it raw with lime juice and chili powder. I found a bunch of "recipes" online this way-evidently it's commonly served this way in Mexico as a snack. I also read it's a good with dips.
Carb count for a half-cup is 5 grams, but 3 grams of fiber, so looks like it's a keeper!
