I found an interesting article listing the side effects that may be caused by the food. I knew that some foods may cause heartburn, constipation or allergy, but I didn't think that food is sometimes responsible for arthritis.

Thanks for the article. It was a very comprehensive list. Since arthritis is partly caused by toxins getting stuck in the joints and causing inflammation, it stands to reason that processed foods and fat would cause arthritis to be worse.

Toxins in animals (and humans) are stored in the fat cells so if we eat a lot of fat, we're consuming the toxins that were in it.

Another thing to consider is the fact that carbohydrates are inflammatory. So if you have arthritis (as I do) you might want to think about cutting the carbs. My endocrinologist suggested going to a low-carb way of eating. I did so and my daily pain level decreased from a steady 7 out of 10 with flares up to 9, down to 1-2/10. I clearly remember sitting at the breakfast table with a stunned look on my face. Hubby asked me if I was OK and I just sort of whispered, "I don't have any pain." I was afraid that if I said it too loudly, the pain would return!!!

I've been low-carbing for almost 5 years now and my pain levels are directly related to the amount of carbs I consume.
