Shannon, I read your article about going back to work. Here are my time-saving hints learned when I was a working mom and had 3 kids at home:
I did the whole weeks supper meals on Sunday while cooking a Sunday dinner. I just made enough extra for weekday meals. A big pot of spaghetti sauce to warm up for pasta or sloppy Joes. Oven baked chicken parts to reheat. Cooked pasta kept in a tupperware to drop into boiling water. For greens I chopped up raw vegies and stored in tupperware along with torn lettuce. Kept English muffins in the freezer to go with meals.

Hope these hints help others out ...

Why do you work?

Today a women can be home with her kids or can work. Which have you choosen and why?

I have choosen both, I went back to work after my son was born, I stayed home after my daughter was born and 4 years later I went back to work.

I found benefits in both choices. When I work my kids miss me and I appreciate the time we have together. When I stayed home I was there for them and they learned to rely on me and grew close to me. Personally I liked being home with my kids.

I am a stay at home mom, who is looking to find something to supplement an income. At first, I didnt know how I would handle it, but depsite having to be on a budget, it is going good.

When I was home I took care of kids for $700 per month per full time child. It gave my kid someone to play with, which meant she wasn't looking to me to entertain her. As it was a business we were able to write off a lot of our household expenses and my husband would get a nice cheque at tax time.

Time Saving Idea for Moms - want to give your kids nutritious non pre packaged lunches? Find a friend who stays home and can bake. Buy nutrious baking from them, that way you help a friend and your kids get nutrious home baked goodies in their lunches.

Always make doubles and freeze half. As long as this doesn't tempt everyone to overeat, you build up quite a good back-up of meals. Since I come from such a large family and have never recovered from cooking for a crowd, I'd always cook way too much. Over time, I learned to make smaller batches of large amounts and freeze for later. It's not leftovers if it's properly stored in a container that can go into the oven or microwave and doesn't have a serving spoon sticking out of it.

Lasagna is a great meal that can be made in a large batch and then some frozen in smaller aluminum pans that you buy at the grocery store.

Anyone else know of meals that work well to make lots of and then freeze smaller portions for later.

So do Swarties -- I've also heard them called Funeral Potatos. It's a best of bridge receipe. It has hashbrowns, mushroom soup, cheease, sour cream, you get why they're called funeral potatos.

I like to make pancakes sunday morning before church. I make an extra batch to keep in the fridge. During the week pop them in the toaster and you have good pancakes.
