an added note..

I have to admit I LOVE my breads, pastas, potatos..and you described the warm comforting feel of eating them perfectly.

But if they eventually begin to taste like cardboard..great! I think I could deal with not eating them then..lol

If you start there and work through the basics, that will tell you how the diet works, give you carb charts to know the carb counts of all typical foods, and get you started. Feel free to post a new thread with how you are doing, and we'll give you pointers!

That bread / pasta / potato stuff really isn't very good for you. It is "quick energy" which few of us need. Most of us aren't doing dawn to dusk farm labor <img src="/images/graemlins/smile.gif" alt="" /> They give you a quick dose of energy, followed by full sleepiness - and then you're hungry again.

I know..it's horrible isn't it!... I use to watch marathon runners really stuff themselves with spaghettis and all sorts of high carb starchy things the night before a big run...and well...I'm no marathon runner..so all it does is settle in and make itself at home in my stomach and thighs <img src="/images/graemlins/frown.gif" alt="" />

AH.....2 years and counting. My mother started over 10 years ago. She and I have a blood condition that is controlled by a low carb diet. So this is how I live. I LOVE the books by Dana Carpender, and have many...many tricks up my sleeve! I feel great eating like this, but find the same frustrations as others...people DONT get it! Even my own mother-in-law sent me a nutrition book because she felt I was eating unhealthy. HMMM....eat low carb or go on medication for the rest of my life....what choice would you make?

I really think that people who fight low carb have a very twisted view of what it is about. They think we eat only steak and eggs - and no veggies. But really, most NON low carb eaters only eat potatoes for their veggies!! So many studies have been done on kids that say their only vegetable they eat is the French Fry. If that isn't scary, I don't know what is.

Low carb tells you you MUST eat veggies - and heathy veggies at that. It insists you eat a good amount of broccoli, cauliflower, asparagus, spinach, lettuce etc every single day. Given how many people do NOT do that, low carbing is very very healthy. And then yes it says protein is important too - things like grilled chicken and grilled tuna because of the important omega oils.

It tells you NOT to eat processed and fast food because they are nutrient-poor. Who is going to argue with that??

I would invite any nay-sayer over to a full low carb dinner. Feed it to them and then tell them it's low carb. Ask them what they eat every night <img src="/images/graemlins/smile.gif" alt="" />

I'm only just hearing the 'feedback' when i tell people that I'm on a low carb eating plan...

they all give me that concerned look and say ... "well... just be careful"..lol... they never showed that sort of concern when I was stuffing the breads and pastas down my gob!

I find myself defending low carb eating BIG time..it can certainly be frustrating when people try to argue that I need that stuff..blah!..and what?..I don't need all that water and all those vegies and chicken and fish?? I'm eating healthier then I've ever eaten before and feel so much better.. If they only knew...

Right, I think that's the big issue. People think it's "normal" to eat a ton of chips, candy, soda, ice cream, processed meals, etc. They send their kids out with white bread, sugar-filled jelly, sugar-filled peanut butter and cans of soda and think this is normal. Then you talk about going low carb and they panic "OH YOU'RE GOING TO DIE!!!"

Low carb is solely about eating HEALTHY foods and avoiding those overly-processed foods. You're supposed to eat a ton of veggies - but aim for the healthy veggies. You're supposed to eat fresh fish, grilled chicken. It's far, far more balanced than probably 75% of the US population eats. But because it's different, people panic. If you looked at how our grandparents ate, they NATURALLY ate low carb. It was normal and healthy.

It's like how nutritionists used to tell us to remove ALL fats from our diet including olive oil - when countless studies have shown how incredibly healthy olive oil is for you. Fish oils are too! So it goes to show how scientists are still catching up with common sense.

Just tell them you are eating only nutrient-rich foods an that pasta just doesn't count when compared with broccoli and rye bread. Then ask them what they're eating <img src="/images/graemlins/smile.gif" alt="" /> <img src="/images/graemlins/smile.gif" alt="" />

Hi,
Newbie here.
I went on low-carb for about 3 months, lost weight, and gradually fell off the ban-wagon.
I kept falling because I found that my energy level increased when I included carbs back into my diet. I'm pesc-vegan and have an occassional sweet snack. :-(.
Now I think I go overboard...(emotional eating)...total spiral out of control. Not giving up hope, I'm trusting that soon I will find a plan that works better for me.
