My answer depends on what you like to do and how far you want to go. For sheer beauty, especially this time of year, the Hudson Valley is hard to beat. There's hiking and biking at Bear Mountain State Park, Washington's Headquarters Musuem in White Plains, and the Hudson River Maritime Museum in Kingston.

For me, I'd visit Buttermilk Falls (West Nyack) and have a picnic, taste wine at Brotherhood Winery (America's oldest winery, they frequently have events on weekends, check http://www.wines.com/brotherhood) and take a cruise on the Hudson (Highland Cruises, http://www.commanderboat.com) in West Point.
