How do you make a great spread for bread, toast, and crackers? Start with a creamy goat cheese, also called chevre. Then, add just the right mix of herbs. You'll have people eating every last crumb of the delicious Herbed Goat Cheese Spread. Here's the recipe. Herbed Goat Cheese Spread

If you want a low carb alternative to bread, here's an idea. Use veggies to substitute for crackers. Slice a well-washed young cucumber or summer squash on the diagonal. That makes a larger slice with more surface area. (Do you get a glimpse of me being a math teacher here?) Decide how thick you want the slices. I like mine a bit on the thin side. Then, spread the herbed chevre on the veggie slices. Wow! Tasty and fresh!

I found Mini-Triscuits. Those should be good little open-face sandwich snackers.

This stuff is good on bread, toast, crackers, veggies, spoons, knives...you get the idea!
It is so easy to make. I like getting the goat cheese (chevre) at Costco, since it is much cheaper there. Plus, the quality is high.

We finished the Herb Goat Cheese Spread yesterday. We had it open face on toasted pitas. It was terrific with our French Lentil Soup.

Guess what? I found some more Herb Goat Cheese Spread last night! I forgot that I made a little log of it and crusted the outside with various herbs. Now, we can finish those toasted pitas with some goat cheese tomorrow.
To toast pitas, I rub them with a little olive oil and sprinkle them with sea salt. Then, I put them on the rack in the oven on 250 degrees F. and bake them until they are no longer flexible. Cool them on a rack and bag them up! Pita chips!

I might have to take that herb crusted chevre to work for lunch tomorrow. Maybe I'll save it for dinner, since I won't feel like cooking. Hmm...decisions!
