Les, if the Daddy is not available, I would use a blend of a pepper powder with some heat. If you have a blend of jalapeno, cayenne, and habenero, that should do the trick. Pierce the meat, wet it (I would use something with a bit of oil and some seasonings of your choice), and rub the pepper on. You might want to wear gloves, although I don't.
The Daddy package recommends marinating for 30 minutes. I let mine soak for about 3 hours.
