You could also use any leftovers (even add some finely shredded baby spinach leaves - uncooked - for extra bump-up or texture etc) as a thick gravy over baked potatoes with a side salad for a light meal, check your seasoning and crumble some extra feta cheese over the top.
OR you could use it instead of butter on your favourite boiled egg (and pickles?) sandwich!
OR you could use it as a layer if you make a macaroni cheese or lasagne type vegetarian bake
Or you could use it as a pasta sauce (optional add almonds or similar) plus some grated fresh parmesan or pecorino cheese for a treat, though feta cheese would do as well.
Or you could maybe use it in a fondue as a sauce with cooked chicken or pork dice
