Another way to use these marinated vegetables is to stuff a pita. Either melt cheese in the pita, or add some hummus. Then, shred lettuce and add some marinated vegetables. It makes a delicious and nutritious lunch with a fairly low carb count.

One of our favorite ways to eat quesadillas is with marinated vegetables as it is served in the outdoor antojito restaurants near the main indoor mercado in Morelia. They have huge bowls of marinated broccoli, cauliflower, zucchini, onions, and carrots. With quesadillas stuffed with squash flowers or tinga or chorizo, it is a meal unto itself. These restaurants do a super business as they are in a busy shopping and touristed neighborhood and also near the medical campus of the U. of Michoacan. Those bowls of vegetables are forever being refilled as they are so popular. A "grande"/ extra large quesadilla stuffed with good cheese and filling of your choice along with all the marinated vegetables that you can eat costs around $1.60. Of course, I always get two!
