When summer heat is driving you crazy, think about those little globes of red sunshine-tomatoes. Filled with juice, vitamin C, and acidic flavor, these fruits of the tomato vine make the heat of summer worth enduring. We all know that the summer tomato from the garden is a lot different from the cardboard tomatoes that you can buy in the store in the winter. Slice some succulent tomatoes, bake up a batch of crispy bacon (yes, I said bake!), and add lettuce and mayo to some high quality bread, and you have what my mom used to call "good eatin'!" This is a great sandwich for breakfast, lunch, or dinner. A Bacon Lettuce and Tomato Sandwich is one way to grab a bit of summer. Properly made, they are a food group all by themselves! Have you had good tomatoes in your area this summer? Our tomatoes here have been hurt by the extreme heat and humidity. There are very few available.

I LOVE tomatoes. We used to have tomato sandwiches when I was a kid. Basically brilliant red, juicy slices of tomato with mayo on white bread - yum
BLT's I haven't had in a while, but those were delicious too!
It's always depressing whent the weather hurts the crops, not only are they more expensive, but you actually have to ask for tomatoes when you go to a fast food restaurant.

I love cheese and tomato sandwiches. Juicy, acidic red slices of deliciousness on sourdough bread slathered with mayo and just one piece of American cheese. Oh, my!

Today one of my co-workers gave me three red globes of perfection. They were ripe, acidic, and flavorful tomatoes. We only had 5 pieces of bacon,not enough to make a BLT, so we cooked the bacon in the microwave. It took 10 minutes to get them perfectly crispy. Then, I pulled out some Morningstar Farm Chik patties. We heated them in the microwave, too. I put mayo on some wonderful sourdough bread, then added the bacon, chik patty, tomato slices, and lettuce. Wow, what a sandwich treat!
Sometimes, fantastic sandwiches can arise spontaneously, and tickle the tastebuds until you say, "Aaahhhh!"

I agree! The sandwich is a wonderful invention! Spontaneous sandwiches are a delight. I know this will sound weird to all the non-Asians out there, but one of my quick and easy snack sandwiches is to put some Korean kim chee on a slice of bread, fold it over and crunch it down! A kim chee sandwich! Before you get freaked out, consider it like spicy, marinated coleslaw. People do put coleslaw on sandwiches, don't they? BBQ pork sandwiches.
Another spontaneous sandwich is Nutella and banana (my hubby loves those) or cream cheese, bacon and jalapeno pepper jelly on toasted bread.
Today, my husband and I split this gigantic club sandwich (although they forgot to put in the bacon. waa) on marble rye. OMG. So so delicious.

The next time I get some kim chee, I'll have to try that sandwich. BTW, I've never met a kim chee that I didn't like!
Those sandwiches certainly sound tasty. Time for bed before I decide it's time for the fridge!
