Before I depart from this site, I wanted to share a few more of my mother's recipes. And then, I got the idea to solicit reader recipes and stories to share on the Japanese Food site. That will help simplify my load so I might be able to stay on as editor PLUS provide readers with a lot of interesting stories and recipes from different people who may not have the time, recipes or desire to pen an on-going column.

Pete's Ginger Salad Dressing Submitted By: Iron Stomach Prep Time: 10 Minutes Servings: 8 "If you love the ginger salad dressings served in Japanese restaurants, you're gonna love this! Use any blender, but I love my Vita-Mix." Ingredients: 1/2 Cup Minced Onion 1/2 Cup Peanut/soy bean oil 1 stalk Celery 4 Tsp Soy sauce 1/3 cup rice vinegar 1 carrot (peeled and top removed) 4 Tbsp. Fresh Ginger 2 Tbsp Tomato Paste 2 Tsp Sugar 1 Tsp Salt 1/2 tsp White Pepper Hot sauce to taste (Texas Pete's as a suggestion) Directions: 1. Combine all ingredients in a blender on high speed. Blend till well pureed. 2. When I cook, I cook by sight...therefore the ingredient amounts are 3. estimated. When preparing, taste dressing and adjust ingredients 4. accordingly.
