Start a new project when an old project gets too complicated to "travel"? I realized this may be the biggest reason I start new projects. If I get to a heel turning or a complicated lace pattern or something requiring too much counting, and I need to have "public knitting" I just cast on something else. I seem to spend a lot of my time waiting in public places and having knitting I can concentrate on while in distracting places is really helpful.

How about you?

Oh yeah. Also, I find if a project is just too big to take to an appointment and sit in the waiting area with, then I take something small, like a doll sweater or something.
