(This is my grandmother's recipe. She made this for EVERY holiday dinner because we all loved it!) Now I make it in her memory. <img src="/images/graemlins/smile.gif" alt="" />

1 pkg. lime jello
3/4 c. boiling water
1 c. evaporated milk
9 oz. can crushed pineapple (don't drain)
1 T. lemon juice
1 c. cream style cottage cheese
1/2 c. broken pecans (or walnuts)
1/2 c. minced celery
1/2 c. salad dressing (such as Miracle Whip)
small jar pimentos for color (optional)

In a large mixing bowl, dissolve jello in boiling water. Cool slightly, then stir in evaporated milk. CHILL until mixture is very thick.

Stir in pineapple with juices, lemon juice, cottage cheese,nuts, celery, and salad dressing.

Pour into an 8" square pan or casserole dish. Chill until firm.

YIELD: 8 servings
