I'm missing desserts a lot, so I've been working out some low carb desserts.
So far I'm going to attempt some mock almond ice cream and maybe a mock lemon meringue pie. I've mastered low carb cheesecake. Anyone else have any dessert recipes they want to share and trade for my potential ice cream and lemon meringue recipes? :-)
Or if you just want to try what I have in mind...
For the Lemon Pie, I'm basically going to take my cheesecake recipe and add a packet of sugar free lemon Jell-o to the batter and then make the meringue like this:
In a medium bowl, beat three eggs either with an electric mixer or by hand. Add 1/4 teaspoon lemon juice and a pinch of salt. Begin beating slowly at first, which will produce small, stable bubbles. After a minute or so, increase the speed and beat until soft peaks form. Beat in 18 packets of sugar substitute, 1 or 2 packets at a time until stiff peaks form, which will take 7 to 10 minutes. If you don't have superfine sugar, make your own by grinding granulated sugar in a food processor until very fine. This will make about 4 cups of meringue.
I altered this from another site's recipe to be low carb.
The ice cream:
1 cup heavy cream
1/2 cup sugar substitute (recommended: Splenda)
1 teaspoon no sugar added vanilla extract
1/8 teaspoon no sugar added almond extract
With an electric mixer on high, whip the heavy cream in a bowl just until frothy and add in the sugar substitute and extracts. Continue to whip on high until peaks form. Be careful not to over-whip, or cream will break.
Freeze or serve as a mousse.
I altered this recipe from another site as well. You could probably make strawberry or any other flavor ice cream you can find extracts for that are low carb.
