I was at a pow wow last year and one man brought what he called 'stuffed pumpkins'
He had cooked cantaloupe sized all day in a crockpot, inside the pumpkins were all kinds of herbs and spices with lots of wild/brown rice. It was so0o0o0o good with chicken gravy that night =]

yummy! That does sound SO good! I also love the pumpkin donuts this time of year. They are mildly spicey with a warm glaze and oh so yummy! But, alas, low carb won't allow them this year...BOO <img src="/images/graemlins/frown.gif" alt="" /> I'll just have to depend on my memories! <img src="/images/graemlins/smile.gif" alt="" />

I understood perfectly what you meant by "cantaloupe sized", Wendy Tall One! but I understand the stupid days, too...LOL <img src="/images/graemlins/smile.gif" alt="" /> Hope your sinuses are feeling better!

Ugh I know it's poison, I abhor taking anything that has to come from a pharmacy. But when it's between having a runny nose, massive headache and the sniffles at work all day I think I'd rather be a bit dopey.
On the bright side...I'm much better now =]

And I bet that pumpkin stuffed with all kinds of cinnamon and nutmeg served warm with some vanilla bean ice cream would be divine....

Hey Deb! Thanks for these awesome recipes! I have 4 kids who love pumpkin but one of them would eat it nonstop if I'd let him. They'll enjoy trying some of these.

Hi everyone. I apologize for being absent for a while. My husband had an unexpected triple bypass (as if any bypass was expected) <img src="/images/graemlins/smile.gif" alt="" /> Anyway I got side tracked. I appreciate you all coming in. I love pumpkin too.. this time of year is wonderful for pumpkin stir fry, pumpkin chips, pumpkin everything lol.. <img src="/images/graemlins/smile.gif" alt="" /> We "Fall babies" enjoying the Fall harvest here..Anybody else have any good pumpkin recipes? It is really cool to see all the ways that we can prepare and ingest that wonderful fall fruit, the pumpkin! And that warm pumpkin with vanilla ice cream sounds so....yummy! :rolling:

Have you carved your pumpkin yet? Or do you just paint them? How do design your jack o lantern? Freestyle or by pattern?

painting is for sissies...or those that dont have enough time and buy them prepainted @ the local grocery.
Last year I carved my pumpkin into a dozen pies > <img src="/images/graemlins/smile.gif" alt="" />

a neat trick for those who carve their pumpkins is to try scraping off the skin instead of cutting out huge chunks...provided the pumpkin flesh isnt that thick it will shine through as well - this works for the really well for the detailed kind of carvings. or intermingle cut out chunks with scraped areas for depth etc.

That's cute, Wendy! :devil: perfect for halloween! I usually carve my pumpkins, too, although last year was hectic and I did have to buy a painted one at the market. Wish I could paint them myself, could probably make some money this time of year. I do the chunky cuts. My neighbor does really elaborate designs using the skin scraping. I've never tried it but it sure does look good! <img src="/images/graemlins/smile.gif" alt="" />

Yes it was successful.. then I took up a job at the Pizza Hut to fill in the blanks .. but I think I'm going back to nursing now <img src="/images/graemlins/smile.gif" alt="" /> hey.. serving pizza with shots.. how lucky can my patients get? <img src="/images/graemlins/wink.gif" alt="" /> ...
