Not bad, not bad. But I've got an even better one. I'm brilliant at making pies, in fact 'poof pastry' is my middle name! It is!*
Apple Puff Pies
1 (17 ounce) package frozen poof pastry from tescos. Walmart
2 medium size sweet (like me) apples
1/3 cup brown sugar, firmly packed (oo-er)
2 tablespoons flour
1 teaspoon grated lemon peel
1 teaspoon fresh lemon juice
1 teaspoon ground cinnamon etc etc
1/2 teaspoon freshly grated nutmeg
1 large egg, lightly beaten not stirred
Preheat oven to 375 degrees F. Thaw frozen puff pastry according to package directions** Meanwhile chop apples. With a chopper, obviously!
In bowl toss apples with sugar (oo-er again), flour, lemon peel and juice, cinnamon etc etc.
On lightly floured board cut each pastry sheet into nine 3-inch squares. In center of each square place about 1/4 cup apple mixture, brush edges of square with beaten egg. Top each filled pastry with second square. Press edges with tines (prongs, the spiky bits) of fork. Using a sharp knife (careful) make 1-inch L-shape in center of each square, fold back pastry flaps. Place on ungreased cookie sheet and brush with beaten egg. Bake for...oh, I've forgotten. Anyway, they're really brilliant. Serve cooked with a nice cup of tea or absynth. Chuck a bit of cheese on top if you want it fancy or he's bringing important clients back for supper.
