Here are the top 10 most nutritious vegetables and why you should eat them. Top 10 Most Nutritious Vegetables
My kids are actually doing better than me! (I hate peas!!!!)

But I could literally feed those 3 broccoli every day, with or without cheese, cooked or raw, and they would be happy.

BTW - do soybeans count at all as a vegetable, or only as a protein? We actually love eating edamame stirfried up with a little garlic, and I'll often serve it as a side dish - but maybe I shouldn't?
I throw peas in everything just so I can increase my vegetable intake. I love just about everything on your list but I find it hard to get the green leafy vegetables in my diet. I'm not much on salads unles they are really fresh.

What is in cauliflower? I guess I thought it wasn't as nutritious since it is white.

I add veggies to everything too, even pasta dishes. I joined an organic food coop where I get a big bin of organic, locally grown fruits and veggies every other week. This has gotten me to try new things like kale and swiss chard, which I had never bought before on my own.

It's a challenge to look up new recipes and try them too for foods I'm not familiar with.

Cauliflower is one of those veggies that helps protect you from cancer, like brocoli and brussel sprouts. It has vitamin C and E, plus protein from the amino acids and lots of B vitamins.
