This is your ol' buddy pdwiles! I have a question, and I just knew you'd be the one who could answer it, cuz you are the queen of healthy cuisine! <img src="/images/graemlins/laugh.gif" alt="" /> <img src="/images/graemlins/laugh.gif" alt="" /> <img src="/images/graemlins/laugh.gif" alt="" /> I'd like to find a low-sugar pumpkin pie recipe that would be good for diabetics. As you know, my 16 year old son has type 1. I'd like to be able to find a recipe for this so he can enjoy the tradition with the rest of us. He's a carb-counter, so we don't necessarily go by exchanges, and because he's a growing guy he gets to eat a nice amount of carbs at each meal. But I'm sure regular pumpkin pie would take up a huge amount of his carb count.

I just know that in your vast reservoir of resources <img src="/images/graemlins/smile.gif" alt="" /> you could help me solve my dilemma. Thanks, buddy!

Good to hear from you <img src="/images/graemlins/smile.gif" alt="" /> . I took a look at Kitty's recipe and it looks great to me. We're not big on sweet desserts at our house - we usually just go with some fresh fruit.

Let us know how your pumpkin pie turns out. I'm sure there are a lot of other folks out there looking for a healthier alternative.
