Garlic Prawns cooked in the oven or on top of the barbecue have great flavour and gusto. Serve them with crusty bread or crisp rolls. Some people like to dip the bread in the hot garlic-flavoured butter-and-oil mixture.The quantities given in the recipe here are enough to serve about four people, but of course if you're giving a larger party or barbecue simply increase the ingredients according to numbers.

INGREDIENTS


1kg green king prawns
500ml (2 cups) oil
125g butter
8 cloves garlic
2 small red chillies
1 tablespoon chopped parsley
salt
pepper

METHOD

1. Shell prawns, leave tail intact. With small, sharp knife make a slit down back of prawn, carefully remove back vein as shown. Wash prawns, pat dry.
2. Put � cup of oil into 4 individual heatproof dishes. Add 30g butter to each dish. Crush 2 cloves garlic into each dish. Remove seeds from chillies, wash and pat dry. Chop chillies finely, divide evenly among dishes. Season with salt and pepper. Put dishes on oven tray. Put at 180�C for 10 to 15 minutes or until butter has melted and oil is very hot.
3. Remove dishes from oven on tray. Divide prawns between dishes. Return to oven for 8 to 10 minutes or until prawns are cooked. Cooking time depends on prawn size. Serve immediately, sprinkled with chopped parsley.
