2 lb. catfish fillets
salt and pepper to taste
1 c. all-purpose flour
1 tsp. salt
2 egg yolks
1 c. lukewarm water
1 T. pure vegetable oil
1 egg white, stiffly beaten
vegetable oil or peanut oil for frying

Dry fillets throughly; sprinkle with salt and pepper to taste. Combine dry ingredients in a bowl; drop egg yolks in center. Add water and 1 T. oil; stir well.

Fold egg white into batter. Dip fillets into batter and fry until golden on both sides in 1/4 inch of oil heated to 370 degrees F. Drain on paper towels.

YIELD: 6 servings

NOTE: I add cornmeal to the flour for extra southern crunch. <img src="/images/graemlins/smile.gif" alt="" />

My SO uses the same process for frying fish as he does for chicken.

Dip in buttermilk, dust in flour mixed with salt/pepper/cajun seasoning, repeat, fry.

Its wonderful!

I'll fry up some homemade fries and hushpuppies. How about some good ole southern coleslaw on the side? We've gotta have homemade tartar sauce too! Yum!

That sound great too! My tummy won't tolerate cajun seasoning though. I wish it would. <img src="/images/graemlins/frown.gif" alt="" />
