January is a good month for casseroles. The shorter days, cold weather and my daughter's busy school calendar make it harder for me to find the motivation to cook! I usually make a big roast of some kind in the Crock Pot over the weekend and try to figure out ways of keeping it interesting during the week.

According to my grandmother, this Ham and Cheese Rice Casserole was a favorite of my great-grandmother's when her mother made it! It has withstood even the pickiest eaters throughout the generations. It's simple and satisfying.
