I was watching a chef cook eggplant. He sliced the eggplant into about 1" slices and "roasted" them in the frying pan over high heat in olive oil. He flipped them and poured more olive oil into the pan. Just before he was ready to serve them he steamed them by pouring liquid into the pan and covering the pan for a moment or so.

I used this recipe with a little bit of modification, placed the eggplant into a pan with sauce and covered the eggplant with sauce and mozzarella cheese. I baked it in the oven until the cheese melted.

Have you ever cooked eggplant this way? It was really good.

Yes we adore eggplant. There are so many different ways it can be prepared! It's one of those ideal foods :).

It sounds delicious!!! We also adore eggplant. You can also add those slices, after having been "roasted" on the frying pan, when preparing a lasagna. It's really good!
