Candy Roaster is a cultivated squash in the cucurbita maxima species. It originally came from South America as a wild plant well over 4000 years ago. The Cherokee people of southern Appalachia came across the seeds in trade and developed the Candy Roaster into what is today's cultivated, and prized favorite, of southern Appalachia cooking.

Phyllis, this pie sounds delicious, as well as the other variations you mentioned for using up the squash. I don't know if I can find a Candy Roaster squash here in the northeast, but I will certainly look out for it the next time I am in the grocery store.

I love all kinds of squash too, Phyllis. I just recently roasted a butternut squash.
mmmm! Roasted Butternut is so good. What do you put on yours? I like it all chopped up and placed in a lasagne pan with brown sugar, butter, nutmeg, cloves, and just a little cinnamon.
