Hi my name is Mike....longtime lover of the heat, looking forward to sharing some thoughts and ideas with some like minded folks here! I grow a small amount of chiles at home here in Wisconsin with pretty good success...this year I grew Carribbean Red Habeneros, Serranos, Jalapenos and Chiletepins....I made up a few big batches of hot sauce for family and friends, jarred a bunch and of course ate as many as possible fresh off the vine in salsa....As autumn is now upon us the time is here for full on indulgence in all things firey and spicy to warm us up on those chilly nights! Did you pepper any vinegar with any of the peppers? It's grand on any kind of cooked green leafy vegetable, especially collards, kale and cabbage. You know, I love Carribbean Reds. I stopped a supermarket near my office one day last week and was enraptured with the pepper section. There are so many available now. Fresh off the vine must be pure heaven.

Hi - recipe wanted!
Chilli con Carne recipe which can have some spices/seasoning added at the end so that I can take portions out during cooking for kids who can't take their chilli too hot? Is paprika better than chilli for example?
Paprika is milder than Chilli powder, cayenne pepper is HOT, Paprike is mild, in my experiance.
I think Paprika is made from peppers reather than chillies and thats why.
Now that's something I didn't know! Thanks. I will try chilli con carne with paprika and report back here!
Is paprika the one used in Hungarian Goulash?
I love hot and spicey,esp. chicken or veg. due to lack of cholesterol. I would appreciate recipes with a difference. I grow those little red devils and blend them in with various veg.
like green pepper and garlic. That way they are more flavoursome
than straight heat.

Paprika is one of the main ingredients in goulash. It comes in many varieties and can sometimes be hot. Check the variety and make sure you're using either a sweet paprika or a smoked paprika.
I have a question - a worrying one.
I just read that lots of our favorite spicy foods that are red contain a cancer-causing toxin. This has been banned in UK and USA etc now, but is still getting in, through cheap imported spices and mixes - ie from China etc.
Can affect recipes such as masala, tikka, sweet n sour, barbeque, satay etc.
Any advice?
