I love recipes like this that are simple and walk away yet packed with flavor. I have cooked the heck out of this recipe, changing it up by covering with sauce....any kind of sauce. We did one the other night, running the corn tortillas through an olive oil garlic sauce "aglio e olio" and filling with chicken. Let us know what kind of recipes you can think of.
