When “Mexican food†is mentioned, what pictures come to your mind? Nachos, taco shells, bottles of some nondescript red salsa? Or an incredibly historical and complex cuisine?!

I love mole, ceviche, arroz con camaron o pollo, chile verde, tamales, carnitas, and menudo!
Yet, I am guilty of loving those crunchy shredded beef tacos as well!

Ah, you have obviously eaten proper Mexican food Lori! and gone beyond Taco Bell and fajitas kits. There is so very much more to Mexican food than most people realise.

I live in a small town,in Quebec Canada.There is a small Mexican Restaurant but his prices are out of this world.
maybe 15 years ago another Mexican restaurant,existed.What I remember,the peppers,so hot ,Chicken .
I wish I could eat more of your food.

Oh, so sorry to hear that, loong. About the prices, I mean. Here in Southern California, we are so close to the Mexican border that we have access to very inexpensive Mexican cuisine.
In fact, the ingredients here are cheap.
Anyway, I wanted to add that I do like to make large pots of Caldo de Res and Chicken Tortilla Soup. Delicious!

Have you never tried making Mexican dishes at home, Loong? Most of the basic ingredients are available by mail order if you cannot find them in your local supermarket. And the chillies do not have to be terribly hot, many of them are quite low on the heat scale. Do have a look at my chilli article: Chilli - Dynamite in the Kitchen

Dear Isabel, I wrote the other day that our little mexican restaurant was expensive. Noon Special of the day .........$ 14.95 plus 15 % tax plus tip. Won't be eating Mexican food for a while. loong
