It's not that I love eggplant that much, well maybe I do love it, but I was having trouble getting it to post! That's why there are three of them.

Squashburger sandwich with lettuce, tomato, pickle, onion, Ranch dressing, and provolone cheese on a grilled hamburger bun. Really! There is a squashburger recipe in my archives. We just love them at our house. They are a good way to use that extra summer or zucchini squash. If you are longing for summer, pick up some squash at the store and whip up a batch of these!
