Right now I'm having a yummy roasted veggie sandwich for lunch. It's on a flour tortilla (24 grams of carb) covered with an Italian cheese blend. I dolloped some Newman's Own Sockarooni sauce on half and placed 2 slices of roasted eggplant on the other half. Microwave for 1 minute, and yum, yum, yum! Fold it in half. Quick and easy.
