Just wondering what the effect is for those of us with mildly unruly hair (i.e., the wavy hair that sticks out at unfortunate angles in all the wrong places when allowed to dry naturally).

Speaking as a beautician for 35 years, if I had unruly hair, I would myself do this: Shampoo, condition (any kind), apply a gel (any kind), rub well from roots to ends, and simply "shape" with your hands what you would like your hair to be. Then, let dry naturally, and if necessary, use a "flat iron" to straighten, turn under or up, or a hot curling BRUSH (not a curling iron) to "finish up" the final style, depending on the length a 3/4 inch barrel, or for short hair a 5/8 inch barrel. You should be "good to go", until "next time around". Cheers!
