Help please, my friend is turning 40 and we want to surprise her. She has commented that when they do the monthly birthdays at work she always feels left out being a type one diabetic. She is very cautious about cake and sweets. She says, "if I avoids them totally it is easier." Angel food cake for diabetic birthday? Any ideas? Help please. Monte

A long time ago we had a friend who was ga-ga over one of my Mom's signature appetizers: chicken puffs.

What these are is taking the little puffs like you would find in cream puffs - except smaller, and filling them with chicken salad.

Well, she didn't like sweets at all, so we did a tower of chicken puffs! And we held them together with a softened cream cheese "frosting" - but it wasn't sweet, it was garlic and

This is an image of a sweet cream puff cake (or profiterole gateu) but you can do the same thing and put a 40th symbol on top
cream cheese.

Empty puffs can either be bought frozen at the store or you can find the recipe at Alton Brown - Pate de Choux

Your friend is very correct - it is easier to avoid sweets totally. But we are taught that on a very irregular basis, the 'rules' can be bent, and I would say a 40th birthday is one of those times. (I bend the rules for each of my birthdays.)

Have a cake made with her in mind. Pick her favorite, or maybe what she would consider a healthy cake (for me that is obviously a carrot cake, LOL) and have it made with Splenda for baking. All that's left is for her to make the necessary adjustments and enjoy. smile

We seem to have ignored your mention of 'surprise'. You cannot surprise a diabetic with a carbohydrate. Either present this to her at her normal 'snacktime' or forewarn her so she can adjust medically.
