I'm finding it's not difficult to stay vegetarian and locarb. Right now life is good.

Today I made eggplant parmagiana...very tasty. It doesn't seem difficult at all to remain locarb and vegetarian. Might have found my niche...

I Love that. I haven't had that is a really long time though. I found if I didn't soak the slices in salt for a while first before cooking then rinse them in cold water, I'd have a real problem swallowing. There is something in them that irritates the esophagus. I have heard other people complain of this too but when I soak them first, the problem doesn't occur. I am that way with walnuts, bananas, Sometimes, and pineapple, unless it's VERY ripe.

So do you fry them first before you put them in the casserole?? I know some people don't but I like it best fried then swimming in a good homemade sauce and tons of Mozzarella. I need to go shop today, maybe I'll get the ingredients. OR do chicken the same way.

I didn't do the salt thing. I googled how to prepare and salting eggplant and rinsing reduces the amount of oil that is soaked up. I just sliced and broiled (I'm trying to stay locarb too) Then put in the sauce with Romano cheese and the mozzarella.. pretty good.

That sounds delicious, Granny! We are big fans of eggplant parm. I always get that if we go out with friends for "pizza".

It's great that you've found a healthy way of eating that you enjoy!

Navigaar - I just asked my boyfriend, who does the cooking around here, about the salt soaking. He said he's never done that. So I guess we and our friends are not susceptible to the swallowing issues. I eat the stuff non stop and haven't had any issues.
