Have any of you guys tried edamame on your salads? They are little pea-like veggies that come in pods, you eat the "peas" inside the pod, not the pods.

Edamame are soybean beans, typically grown in Japan and China. These green, ovalish treats have only 5g net carbs per serving - and also provide 4g of fiber.

They sound wonderful...but I have a thyroid condition and should avoid soy. I've even taken to making my own mayo with light olive oil because most commercial ones contain soy oil... Lo carb will go a long ways to helping since I'm eating practically no processed foods...fresh is best.

Ah ok then no soy it is for you! That is great that you make your own mayo, I bet it is much healthier for you than the store brand ones!

Yes eating fresh is so good for you. All those vitamins and nutrients!
