Michelle, I'm really sorry about your mom's new found conditions, and how upset she is. It is horribly upsetting to be told you must give up foods that you love, and that you have always eaten.
But I absolutely agree with you, that the good news is that she does not have cancer, and with some diet changes, she will be okay! I love your approach, too. Eating natural and organic foods for two weeks will make a huge difference. Her body will become detoxified, especially with large amounts of filtered water, and she will start feeling much better.
I drink only water, no juices, and feel just fine. She might miss her wheat products the most, but there are some lovely rice alternatives to pasta. I also try and stay away from wheat as much as I can, but have found that
Tinkyada brand pastas are a great alternative - they are more firm than other brands that I've tried. And believe it or not, spaghetti squash actually is wonderful as spaghetti - I've even made lasagna with it.
For cooking, whole Quinoa, and Quinoa flours are wonderful. She can also have buckwheat flour and corn products.
Organic Valley makes a lactose free milk, and a company called
Lifetime makes lactose free cheese! The
Silk brand soy milks are very good, too. I'm still trying to find soy cheese that is yummy - do let me know if you are able to find one! Here is a recipe for tahini pasta with chickpeas that I'd like to try. Tahini with pasta has a rich, cheesy flavor that I love:
