Wow I'm sorry Michelle about your moms medical problems, changes are hard for me also, I hope it won't be long before she can adjust to eating differently. And have the strength to deal with the changes in her life, best wishes to your mom.

Michelle, I'm really sorry about your mom's new found conditions, and how upset she is. It is horribly upsetting to be told you must give up foods that you love, and that you have always eaten. frown

But I absolutely agree with you, that the good news is that she does not have cancer, and with some diet changes, she will be okay! I love your approach, too. Eating natural and organic foods for two weeks will make a huge difference. Her body will become detoxified, especially with large amounts of filtered water, and she will start feeling much better. smile I drink only water, no juices, and feel just fine. She might miss her wheat products the most, but there are some lovely rice alternatives to pasta. I also try and stay away from wheat as much as I can, but have found that Tinkyada brand pastas are a great alternative - they are more firm than other brands that I've tried. And believe it or not, spaghetti squash actually is wonderful as spaghetti - I've even made lasagna with it.

For cooking, whole Quinoa, and Quinoa flours are wonderful. She can also have buckwheat flour and corn products.

Organic Valley makes a lactose free milk, and a company called Lifetime makes lactose free cheese! The Silk brand soy milks are very good, too. I'm still trying to find soy cheese that is yummy - do let me know if you are able to find one! Here is a recipe for tahini pasta with chickpeas that I'd like to try. Tahini with pasta has a rich, cheesy flavor that I love:

I don't have celiac, but I do have gluten and dairy allergies. It was horrifying when I first found out - but I found that after four weeks of avoiding these foods that I didn't really miss them. Though if I indulge in a cookie, that's it! I'm hooked again and have to start over LOL!

Tofutti better than cream cheese is a FANTASTIC alternative to cheese! I made some quinua (sp?) with spagetti sauce and added a bit of the toffuti and it was delicious. I also love spagetti squash as spagetti smile

I hope your mom is doing better now Michelle.

Yes, she is! And, caterer that she is, she is starting to enjoy (somewhat) finding the alternative ways to cook stuff. The fact that my dad just had a gastric bypass is helping a lot, because he needs to be low-carb, so cutting wheat products out of their house helps both of them.

It is just that they both grew up eating and cooking down here in Georgia, and have almost 60 years worth of habits to get over. Mom is in mourning over her loss of milk products more than anything. She has always been a big milk drinker.

She just gets really frustrated with food labels. Because she is usually running so much, she hates to take the time to check every label. Once she gets into the groove of what she can buy, I think she will find it a lot easier.

And as someone who had a gastric bypass partially because of the fact that I am a carb addict and needed something to help break that addiction every bit as much as a smoker needs the patch - I understand how 1 cookie can completely set you back.

An alcoholic can give up alcohol and stay away from bars, a food addict must keep eating, but control it. It's hard.

That's for sure Michelle! I just had a terrible sugar craving, so I treated myself to an avocado instead. It's organic from a friend's tree smile

I know after the holidays it'll be much easier LOL. I got into the groove once before, I know I can do it again smile
